Banana bean chocolate chip muffins

Ingredients

  • 1/2 cup oats

  • 3/4 tsp baking powder

  • 1/4 tsp salt

  • 1 1/2 over-ripe banana

  • 1 can/15 oz great northern beans, drained and rinsed very well

  • 1/4 cup peanut butter

  • 1/4 cup honey

  • 2 tsp vanilla extract

  • 1/4 cup mini chocolate chips

  • 1/4 cup chopped walnuts

Directions

  1. Preheat oven to 350 degrees.

  2. Double stack mini muffin baking pan.

  3. Spray with non-stick spray.

  4. Place well rinsed beans in processor.

  5. Puree beans.

  6. Add all ingredients except chocolate chips and walnuts.

  7. Blend until smooth.

  8. Add chocolate chips and nuts (if desired).

  9. Use medium cookie scoop to fill 24 mini muffin cups.

  10. Bake 15 minutes.

  11. They will look underdone - let sit 20 minutes in baking pan and they will firm up.

  12. *Fine to use slightly less honey. Be sure to use full 1/4 cup+ mini chocolate chips.

  13. *Recipe variation - add 4T cocoa powder and 2T splenda to make these chocolate version.
